Deep Winter

As we all wake up to darker mornings, drizzle in the air, and crisp frosty days on the horizon, it’s now time to warm up our daily routines and combat the winter blues. deep winter is back!
 
We are super excited to present this year's release of Deep Winter that has been meticulously profiled to create warming, nostalgic festive notes of dark chocolate, stewed apple and cinder toffee.

Fazenda Catanduva, located in Cerrado is lovingly named after the town where Marie Nakao’s parents were married and started their careers in agriculture and eventually coffee farming. Marie & her husband moved to Patos de Minas, Cerrado from Sao Paolo in 1996. Her farm Fazenda Catanduva oozes her Japanese heritage and epitomises lean principles. Marie's been involved in the farm since the passing of her husband in 2013 and became a true expert in rigorous farming practices and management. Her Japanese heritage has provided a deep rooting in Kaizen farming practices, innovation, post-harvest care, sustainable production and certifications.

The coffee is grown, harvested and processed at the farm. Ripe red cherries are harvested and then dried on patios for 7-10 days. The coffee is delicately and efficiently turned to facilitate optimised fermentation. Once dried the coffee is hulled and bagged ready for export.
