Founded in 2014 by 233 farmers in the La Coipa area of Cajamarca, Union Y Fe is a cooperative that is driven by an ethos of sustainable relationships, trust and quality. The co-op manager Lorenzo Cruz, has been actively working to improve coffee quality by cupping every producer’s lots separately and mapping the areas that produce the highest scores. This way, they are able to pinpoint areas of ideal growing conditions, ultimately driving up quality and helping sustain the lives of the communities who work the land.
The varying growing climates, altitudes and coffee varietals help to manifest extraordinary flavours in the cup. Union Y Fe has citric orange tasting notes, which are set off against sweet tomato and cane sugar flavours. We like to roast it gently to enhance its natural sweetness and to retain a lovely balance of flavours.
